3717-1-04.4(B) / Cutting surfaces.
The surfaces of cutting blocks or boards were severely scratched or scored and could not be effectively cleaned and sanitized. OBSERVED THE CUTTING BOARD ATTACHED TO THE PRODUCE PREP SINK TO BE SCRATCHED WITH DEEP GROOVES ON IT.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. REPLACE OR REPAIR THE CUTTING BOARD THAT IS ATTACHED TO THE PREP SINK SO THAT IT IS EASILY CLEANABLE.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. OBSERVED THE LIDS ON THE BULK STORAGE CONTAINERS (STREUSEL, PECANS, POPPY SEEDS) AND SOME OF THE STORAGE SHELVES TO BE DIRTY.
Nonfood-contact surfaces of equipment shall be kept clean. CLEAN OR REPLACE THE BULK STORAGE LIDS AND CLEAN THE STORAGE SHELVES IN THE BAKERY TO PREVENT THE ATTRACTION OF PESTS.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are dirty. THE CEILING OF THE MICROWAVE IN THE DELI WAS OBSERVED TO HAVE A BUILD UP OF FOOD DEBRIS.
Nonfood-contact surfaces of equipment shall be kept clean. CLEAN THE MICROWAVE CEILING IN THE DELI.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris. OBSERVED THE FLOOR IN THE PRODUCE ROOM TO BE DIRTY.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. CLEAN THE BUILD UP OF FOOD DEBRIS AND DIRT ON THE PRODUCE ROOM FLOOR.
3717-1-06.4(F) / Drying mops.
Repeat Observed mops being dried using an unapproved method. OBSERVED A MOP OUTSIDE OF THE PRODUCE WALKIN COOLER, DIRTY, IN THE CORNER ON THE FLOOR.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. HANG THE MOP PROPERLY SO THAT IT MAY AIR DRY WITHOUT SOILING THE FLOOR & WALL.
