Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. At time of inspeciton, opened dairy milk stored in walk in cooler for over 24 hours observed without proper date markng. CORRECTED: PIC voluntarily disposed of open gallon of milk.

Conducted inspection with PIC Jodi Kline; reviewed inspection findings with PIC. Risk Level IV activities include: Reheats bulk quantities of leftover TCS foods more than once every seven days *** According to PIC, food service is presently not reheating bulk quantities of leftover TCS foods more than once every days and therefore may not qualify as a Risk Level IV facility. This office did provide a Food & Time Cooling record chart to PIC to assist in record keeping to determine if food service is Risk Level III or Risk Level IV. Menu included French toast, pork sausage, and pasteurized milk. ... Food service floor scheduled to be resurfaced over summer.... According to PIC, regulation of temperature of overhead hood system is in question. According to PIC, Kolpak freezer door does not appear to shut properly, causing condensation and ice build up over weekends. According to food personnel, temperature regulation of hot holding units on serving table have been difficult to operate between 135 degrees F and 212 degrees F. This office did suggest Director of Food Operations, and food staff meet with equipment manufacturer to discuss performance and operation of equipment in question.
