Critical Repeat Corrected During Inspection Handwashing sink not accessible. Observed rolling cart stored directly in front of hand sink during inspection, rendering hand washing sink inaccessible. Critical Repeat Corrected During Inspection TCS foods not being hot held at the proper temperature. Observed egg omelettes (130*F) and turkey sausage patties (124*F) hot holding on breakfast buffet below 135*F for an undetermined amount of time. PIC discarded eggs during inspection.

Critical Repeat Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed individual portions of cream cheese and cut melon on breakfast buffet cold holding above 41*F for an undetermined amount of time. 1 oz containers of cream cheese (43*F-57*F) x 6, cut melon (61*F) x 1 plate. PIC discarded listed items during inspection. Discussed ensuring cold holding containers are switched during open breakfast hours to ensure internal temperatures of TCS (time/temperature controlled for safety) foods remain at 41*F or below. Also discussed possibly moving to a time in lieu of temperature policy, education regarding policy and handout provided during inspection.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed open packages of egg omelettes and turkey sausage patties in freezer not date marked. PIC states she opens the package and divides into smaller portions, then freezes them. PIC verified when package was opened and date marked during inspection. Education regarding date marking when freezing provided during inspection.

[52] Improper storage of single-service and single-use articles. Observed boxes of single use cups and coffee stored directly on the floor in extra storage room located on second level. Ensure food and single use articles are stored at least 6 inches above the ground. -Correct by 10/5/23.

Corrected During Inspection Single-service and single-use articles not protected from contamination. Observed single use plates on breakfast buffet stored in holder with food contact surface exposed and not protected from possible contamination. PIC inverted/turned plates during inspection to ensure proper protection.

Repeat Equipment components are not intact, tight or properly adjusted. Observed seal on reach in Arctic Air refrigerator in kitchen area broken. Repair or replace seal by next standard inspection.

Repeat Equipment not approved by a recognized testing agency. Observed black frigidaire chest freezer, white chest freezer, white frigidaire refrigerator, and whirlpool refrigerator in storage rooms that contain cold holding of TCS foods on both 1st and 2nd level not commercial grade. Discontinue use or replace with commercial grade equipment by next standard inspection,

Non-durable equipment observed. Observed Spring Max Induction warmer in breakfast buffet area to be on high setting and not functioning properly to hot hold egg omelettes at 135*F or more. Ensure unit functions properly to hot hold TCS foods at 135*F or higher at all times. -Correct by next standard inspection.

Non-food contact surfaces of equipment are unclean. Observed interior surfaces of the toaster have visible food residue build up. Thoroughly clean interior surfaces of toaster. -Correct by 10/5/23.

3701-21-03 / Facility layout and equipment specifications for FSO
FSO did not submit facility layout and equipment specifications. Observed newly added white chest freezer in first level storage room used to store food for service to not be commercial grade. Observed manufacturers sticker to indicate freezer is for household use only. Discussed facility shall submit equipment specifications to Richland Public Health for approval of any new equipment and that observed white chest freezer would not be permitted for use in the facility. Discontinue use of the freezer or replace with commercial grade. -Correct by next standard inspection.

Comments
Inspection conducted and reviewed with breakfast attendant/PIC and manager. GM states facility has changed ownership. Discussed facility will need to submit a plan review application to obtain a new food license. Plan review application provided in email with inspection report.
