Conducted a complaint inspection on 11/19/21. Spoke with the director Holly and dietary manager Summer regarding complaint. No gnats were observed in the kitchen at the time of inspection. Facility has not had any pest issues recently. A licensed pest control company is contacted if any issues are observed. Invoices from pest control are kept on file in the facility. No hot food available to temp at the time of inspection. PIC stated food is kept between 140-170*F on the steam table when meals are being served. Digital food thermometers are available to take temperatures. Observed trays and silverware in clean condition at the time of inspection. Observed trays stacked while still wet during inspection. Discussed allowing trays to air dry before stacking and storing. Emailed complaint inspection report.
