Comments
Discussed inspection with Ashley Shaver, PIC.

This pizza chain uses and internal time-based system for pizza sauce (see photo) which designates that it is safely permitted to be held at ambient room temperature (on counter top) for up to 24 hours.
PIC states they currently average 3 full containers of sauce per a 12-hour operating day. This would mean a new container of sauce is pulled from the walk-in cooler approximately every 4 hours.
Instructed PIC to time stamp sauce when it is removed from refrigeration.

PIC has signed copies of employee illness agreement on premises.
-Continue to have new employees sign one as well.

PIC has a commercially prepackaged bodily fluids spill kit and written clean up procedures provided by corporate. Cleanup procedure does not state staff must be designated.
Provided RPH written procedures and cleanup kit assembly guide as well.
-Maintain RPH written cleanup procedure at facility.

Provided date marking handout and new choking poster at time of inspection.

Inspection report provided via email.
