3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed chlorine sanitizer to be over manufacturer's prescribed concentration of 200 parts per million (ppm). PIC had solution remade to correct ppm at the time of inspection.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Corrected During Inspection Food contact surfaces not easily cleanable. Observed cracked bowl that rendered it no longer smooth, durable, and easily cleanable. PIC had bowl thrown away at the time of inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed the handles of the Vulcan oven to have sticky residue. Please clean by end of day 10/11/2022.
