No towels or drying device at the handwashing sink(s). No paper towels at hand washing sink by cook line. PIC replaced paper towels during inspection.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed knife in hand sink at time of inspection. PIC removed and placed in warewashing area during inspection.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed top layer of a pan of diced tomatoes to be 48* with bottom of container at 40*F. PIC discarded during inspection. All other diced tomatoes in cooler observed between 40*F-41*F.

Comments
Inspection conducted with manager/PIC. Observed cold holding of chicken, cut lettuce, diced tomatoes, and shredded cheese between 39*-41* in prep coolers and in walk in cooler. Observed fried chicken being cooked to an internal temperature of 179*-185*F during inspection. Refer to complaint report for further details. Inspection report emailed.
