Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Observed a bucket of quat sanitizer solution at 100 ppm. PIC brought solution up to 200 ppm at time of inspection.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed a container of spinach that had been opened for more than 24 hours without a date mark in the walk-in cooler. PIC date marked spinach at time of inspection.

Clean equipment and utensils not stored in a self-draining position and covered or inverted. Observed the top clean pan for pizza dough in the walk-in cooler was not covered or inverted to protect the food contact surface. Correct by next inspection.

Equipment components are not intact, tight or properly adjusted. Observed a ripped gasket on the left side of the Coca Cola cooler. Correct by next inspection.

Nonfood-contact surfaces not easily cleanable. Observed a lid to a cheese container that was cracked. Correct by next inspection.

Non-food contact surfaces of equipment are unclean. Observed a build-up of food debris and residue in the tracks of the sliding door Coca Cola cooler. Correct by next inspection.

Comments
Conducted and discussed inspection with Ashley Messer. Thermometers in the pizza cooler and the pizza make table were missing/not accessible. PIC installed new thermometers at the time of inspection. Discussed when cutting boards need to be resurfaced or replaced. Clean up kit with instructions was on hand at the time of inspection. Discussed obtaining a disinfectant effective against Norovirus to keep with the kit. Left an application for the Ohio Department of Health manager certification in food protection. Emailed report.
