Critical Corrected During Inspection Person in charge not ensuring proper cooling. Chicken a la king that had been in cooler for approximately one hour had an internal temperature of 130F. PIC had moved to a metal pan and dispersed to two inches or less to rapidly cool. Cooling log provided at time of inspection.

Corrected During Inspection No towels or drying device at the handwashing sink(s). Hand sink in ware washing room did not have hand drying available. PIC obtained Hand installed paper towels.

Corrected During Inspection No soap at handwashing sink(s). Hand sink in ware washing room did not have soap. PIC had soap brought out.

3717-1-03.4(E) / Cooling methods - temperature and time control.
Corrected During Inspection Improper method for cooling TCS foods. Chicken a la king was being cooled in plastic container with tight covering and over two inches deep. PIC had moved to metal tray with loose covering and less than two inches deep.

Non-food contact surfaces of equipment are unclean. Inside of microwave had visible debris. Please clean by 10/06/21
