Critical Corrected During Inspection Equipment and utensils contacting TCS food not cleaned every four hours. PIC stated pizza slicer left out at room temperature is cleaned approximately twice a day. PIC stated pezza slicer will be cleaned or changed out every four hours.

Corrected During Inspection Outer opening not protected. Observed the air vent missing on the wall in the back under the window. Unit was being replaced at time of inspection.

3717-1-04(I) / Nonfood-contact surfaces - materials.
Nonfood-contact surfaces constructed of unapproved materials. Observed laminate missing on the cabinet behind the pizza oven where the pizzas are sliced. Nonfood-contact surfaces shall be constructed of materials that are nonabsorbent, smooth and easily cleanable. Correct by next inspection.

Nonfood-contact surfaces not easily cleanable. Observed several container lids that were cracked and not easily cleanable. PIC stated new lids will be ordered.

Nonfood-contact surfaces constructed of unapproved materials. Observed rust spots where the paint was missing on the shelves in the reach-in sub prep cooler. Nonfood-contact surfaces shall be constructed of materials that are nonabsorbent, smooth and easily cleanable. Correct by next inspection.

Repeat Equipment components are not intact, tight or properly adjusted. Observed a ripped gasket on the pizza prep cooler. Observed a ripped gasket on the tall dough refrigerator by the front counter. Correct by next inspection.

Comments
Discussed inspection with Dave and Bianca. Observed left side lid of pizza prep cooler not completely closed at time of inspection. Product temperatures were at 43*F at time of inspection. Discussed obtaining lids for containers to keep products at 41*F or below. PIC stated lids can be obtained for make table. Left blank employee illness reporting agreement and cooling foods safely handout. Emailed report.
