Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed a container of bread pieces without a lid or cover on the shelf above the salad cooler. PIC voluntarily discarded bread at the time of inspection.

Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed a display of unwrapped donuts on the front counter. PIC covered donuts with plastic wrap at the time of inspection.

Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed soup and mac and cheeese in the cooler that was date marked for more than seven days. Once opened, ready to eat TCS foods shall be date marked for no more than seven days if held for more than 24 hours. PIC corrected dates for seven days from the open date at the time of inspection.

Critical Corrected During Inspection Working containers of poisonous or toxic materials not properly labeled. Bucket of sanitizer solution was not labeled with the common name. PIC labeled sanitizer bucket at the time of inspection.

3717-1-03.5(C)(2) / Food labels - packaged food
Corrected During Inspection Label on a food packaged in-house did not contain all required information. Containers of broccoli salad in the grab n go display case did not have ingredients list, net weight, or responsibility statement on label. PIC removed broccoli salad containers from the display cooler and placed in the cooler in the cafe until properly labeled with ingredients list, net weight, and responsibility statement.

Food employee(s) not wearing a hair restraint. PIC will notify managment to obtain hair restraints such as ball caps or hair nets for food employees.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Single-service and single-use articles not protected from contamination. Observed coffee filters sitting on the prep table. PIC moved filters to container under the prep table at the time of inspection.

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection. Correct by next inspection.
