Corrected During Inspection Clean equipment and utensils not stored in a self-draining position and covered or inverted. Items on clean storage rack were not covered of inverted. PIC had items removed from storage and put in wash water.

3717-1-04.1(C) / Food-contact surfaces - cleanability
Critical Corrected During Inspection Food contact surfaces not easily cleanable. Storage container observed with cracks in food contact surface that rendered it no longer easily cleanable. PIC removed from service at time of inspection.

Corrected During Inspection Non-food contact surfaces of equipment are unclean. Shelving beside service line had visible residue. PIC had cleaned.

Outdoor refuse containers without tight fitting lids, doors, or covers. Food dumpster observed with lids open and not in use. Please close by 03/09/22

Physical facilities not maintained in good repair. Wall in employee restroom has tile separating from wall. Please repair so surface is smooth, durable and easily cleanable by next standard inspection.

Facility not maintained clean. Floor under cook line by oven had visible residue. Please clean by 03/08/22

Conducted and reviewed with Manager Tyra Dampier.
Reviewed the cooking, cooling and reheating of chicken.
Walk in produce cooler was not in use at time of inspection. PIC had discontinued use after temperature checks. Unit was not being used to store TCS foods at that time. PIC moved items to other coolers and a service provider was contacted.
