Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed a box of raw chicken on a shelf above a box of fully cooked turkey pot roast in the walk-in cooler. PIC moved box of turkey pot roast to the shelf above the chicken at the time of inspection.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed residue on the can opener blade. PIC removed can opener from service to be washed, rinsed, and sanitized at the time of inspection.

3717-1-04.4(N)(1) / Manual and mechanical warewashing equipment, chemical sanitization (chlorine) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Chlorine sanitizing solution at incorrect temperature and/or concentration. Observed a sanitizer bucket of bleach water above 200 ppm. PIC refilled solution to a concentration of 50 ppm at the time of inspection.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Quat sanitizer dispenser at the three compartment used to fill sanitizer buckets was dispensing sanitizer below 100 ppm at the time of inspection. Discussed using bleach water in sanitizer buckets until dispenser is repaired to dispense between 200 and 400 ppm. Facility has bleach available and PIC created a work order for repair of the dispenser at the time of inspection. Correct by: 4/11/2022.

Critical Repeat Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed a container of stuffed peppers in the walk-in cooler with a use-by date of 3/31. PIC voluntarily discarded stuffed peppers at the time of inspection.

Critical Corrected During Inspection Working containers of poisonous or toxic materials not properly labeled. Observed a spray bottle of cleaner in the dishwashing area without a label. PIC moved bottle of cleaner to the office to be labeled at the time of inspection.

Repeat Corrected During Inspection Single-service and single-use articles not protected from contamination. Observed coffee filters not protected from potential contamination. PIC placed coffee filters in a clean plastic bag at the time of inspection.

Fixed equipment not properly sealed or spaced for cleaning. Observed the caulking around the handwashing sink in the kitchen in disrepair. Correct by next standard inspection.

Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed scoring on the cutting boards of the serving line. Correct by next standard inspection.

Facility not maintained clean. Observed a build-up of ice inside of the walk-in freezer. Correct by: 4/11/2022.

Comments
Conducted and discussed inspection with administrator Sherri Parrish. Left a cooling foods safely handout, cooling record log, and first aid for food choking poster. Re-inspection to occur on Monday, April 11, 2022. Emailed inspection report.
