Complaint on 13-Mar-2023 : Discussed complaint inspection with the manager. Manager stated no employees have been ill recently and are not to report to work if they are experiencing any symptoms of illness. About ten salads are prepped early in the morning and placed in the walk-in to cool. Salads are brought out of the walk-in cooler to the reach-in cooler around mid morning. Walk-in and reach-in coolers ambient air temperature 40*F at the time of inspection. Observed a container of salad lettuce in the walk-in with an internal temperature of 40*F. A prepared caesar salad in the walk-in had an internal temperature of 35*F. Pre-packaged bags of lettuce are received cut and washed. Nothing unusual was noted about the salad lettuce at the time of inspection. Grilled chicken is received frozen and is cooked above 165*F on the grill. Once cooked, chicken is kept in the pull out warmer drawers. Internal temperature of patties in the warmer at 140*F during inspection. Reviewed proper glove use and hand washing practices. Emailed inspection report. |
