Employee Health Plicy is to exclude ill food employees from the food service until they are symptom free (fever, diahrrea, vomiting, persistant coughing, sneezing or runny nose).

Risk level 4 due to nursing home population. Using pasteurized eggs and juices.

No foods are offered raw or undercooked.

Cooling using shallow pan method. Observed shallow pans of cooled foods in the walk in cooler. Thermometers are avilable to monitor cooling temperatures. The PIC states all reheatingis to 165 degrees F. Reviewed required hot holding and cold holding temperatures. All temperatures were acceptable at inspection.

Thawing under refrigeration.

Observed proper glove use while assembling ham sandwiches.

Commercial Food supplier is GFS.

All temperatures acceptable.
