Critical Corrected During Inspection Equipment and utensils contacting TCS food not cleaned every four hours. Observed the milk frothier not washed rinsed and sanitized at a 4 hour cleaning frequency. PIC had cleaned at time of inspection.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed chai tea latte to be datemarked open on 11/22. Ensure all TCS products are disposed of 7 days after opening. PIC had discarded at time of inspection.

3717-1-07.2 / Poisonous or toxic materials: storage and display - separation
Critical Corrected During Inspection Improper display of poisonous or toxic materials offered for retail sale. Observed packaged cutting board oil and soap on display above retail canned products for sale. Ensure all chemicals are stored below or completely separated from foods for sale. PIC relocated to appropriate location at time of inspection.

3717-1-06.1(K) / Insect control devices - design and installation.
Corrected During Inspection Improper use or placement of insect control devices. Observed bug zapping device on prep surface next to microwave, rendering surrounding areas exposed to contamination. Ensure all insect devices are located where there is no potential for contamination. PIC removed device at time of inspection.

3717-1-04.4(S)(1) / Single-service articles and single-use articles - use limitation.
Re-use of single-service or single-use articles. Observed single use rosemary container being reused for yeast. Ensure all containers used to hold bulk products are designed to withstand the warewashing process. Correct by 12/7/2023.

3717-1-04.4(B) / Cutting surfaces.
Cutting blocks or boards cannot be effectively cleaned and sanitized. Observed cutting board to be excessively scored and stained, rendering them no longer smooth, durable, non-absorbent, or easily cleanable. PIC stated she has plans to order new cutting boards. Correct by next standard inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed the interior of the proofer and the exterior of the oven to have visible residue. Clean by 12/7/2023.

3717-1-06.1(A) / Floors, walls, and ceilings.
Repeat Floors, walls, and/or ceilings not smooth and easily cleanable. Observed acoustical tiles in the food storage area, some with water damage. When damaged, facility is to incrementally replace acoustical tiles with tiles that are smooth, durable, non-absorbent, and easily cleanable.
