Half & Half observed in coffee area temped at 56F, PIC stated had been out for two hours. PIC had moved to cooler. TCS foods need to be held at 41F or less. |

Conducted inspection with PIC Darlene Mast, and Madison Lotz S.I.T. Discussed location of sleeping quarters and automatic door closing of restroom door opening to food prep area. Discussed covering of display items and stacking order in refrigeration units. PIC provided documentation of additional display and refrigeration units ordered, but not yet delivered. Reviewed with PIC Darlene Mast. Discussed direct connection of hose to mop sink. Emailed Inspection. |
