Cooking and/or baking equipment not cleaned when required. Microwave next to soda dispenser had visible residue inside please clean by 04/01/21

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Employee preparing to take temperature did not sanitize probe. Prior to taking temperature. Sanitarian informed employee and employee then sanitized probe and took temperature.

3717-1-03.4(F)(1)(a) / Time/temperature controlled for safety food - hot holding.
Critical Corrected During Inspection TCS foods not being hot held at the proper temperature. Several hamburgers in steam table that had been there less than an hour had an internal temperature of 129F. PIC rapidly reheated them to 165F.

3717-1-04.4(I) / Manual warewashing equipment - wash solution temperature.
Critical Corrected During Inspection Manual wash solution not being maintained at 110˚ F or above. Wash water in three compartment sink was 90F. PIC drained and had remade.

3717-1-05.1(D) / Backflow prevention - air gap.
Critical Corrected During Inspection Insufficient air gap between the flood rim and the water supply inlet. Spray hose on pre rinse for warewashing machine is able to hang below flood rim. Facility to discontinue use till adjusted.

3717-1-05.1(A) / Plumbing materials - approved.
Critical Corrected During Inspection Plumbing system components not constructed or repaired with approved materials. Hose and hose reel for sprayer on pre rinse for warewashing machine is not NSF 61 or equivalent. Facility is discontinuing use till replaced.

Physical facilities not maintained in good repair. Dividing wall in kitchen has a hole in it. please repair by next standard inspection.

Repeat Corrected During Inspection Dressing rooms or lockers not being properly used. Observed jacket on prep table. PIC moved to proper location.

Discussed shelving in walk in cooler, when it is no longer, smooth, durable and easily cleanable, please repair or replace.
