3717-1-03.1(L) / Package integrity - specifications for receiving
Corrected During Inspection Observed food in packaging that does not appear to protect it from contamination. Observed vienna sausage can with dent on top seal, 1 can of tuna with milky sauce on top and 1 can of soup without outside label.
To prevent adulteration, food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. PIC pulled from sale.
3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed raw eggs over RTE shredded cheese in main walk in.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. Eggs were to be discarded due to condition.
3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Corrected During Inspection Observed inadequate equipment for cooling, heating or holding food. Observed open air produce cooler to contain cardboard boxes with bagged salads causing from ambient air temperature to be 45*F.
To prevent the growth of pathogens, equipment for cooling, heating, or holding cold and hot TCS food shall be sufficient in number and capacity to provide food at the required food temperatures. Had PIC remove cardboard boxes and limit product stacked inside of unit. Temperature on monitor stating 41.9*F, ambient air temp with probe thermometer after removal: 41.3*F
