Discussed inspection with Marissa. Upper lid portion inside the ice machine has residue. Observed loose panels on the stand underneath the ice machine. Foot candles above the dishwashing sinks are at 15 FC due to burnt out light bulbs. Discussed replacing bulbs to bring foot candles up to 20. Foot candles above the stainless steel prep table where cookie balls are made is at 10 FC. Discussed increasing lighting to bring up to 50 FC. Thermometer in the True refrigerator is in the back of the unit and is difficult to read. Discussed placement of thermometer in the warmest part of a cooling unit by the door and for easy viewing. Left an employee illness reporting agreement and PIC signed at the time of inspection. Discussed keeping a copy of all food safety training certificates on file in the facility.
