3717-1-02.4(C)(16) / Person in charge: duties - ensure the facility has written procedures for vomiting and diarrheal events.
Person-in-charge did not ensure that the facility has written procedures for employees to follow when responding to vomiting or diarrheal events. Cleanup kit with PPE present at time of inspection. Written procedures were provided at time of last inspection, but are not present in facility. Provided written procedures again to management. Maintain at facility.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Corrected During Inspection Observed food that was not properly protected from contamination by separation, packaging, and segregation. Observed uncured sausages (not labeled as fully cooked) being stored above ready to eat foods in the "Aldi Finds" sale area. Observed bacon stored above ready to eat products in the reach-in cooler.
To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.
3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed a handwashing sink without water at the required temperature. Observed the handwashing sinks in the men's and women's restrooms to have a water temperature of 67.5*F.
To ensure proper cleaning of hands, a handwashing sink shall be equipped to provide water at a temperature of at least 100° F (thirty-eight degrees Celsius) through a mixing valve or combination faucet. Correct By: 29-Sep-2017
3717-1-06.2(E) / Handwashing signage.
Corrected During Inspection Observed no handwashing sign(s) posted at handwashing sink(s) used by employees. Observed no handwashing signage in the women's restroom.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of ice on floor and ceiling in the walk-in freezer. Observed a buildup of frost crystalization on racks throughout the walk-in freezer. PIC states component of freezer door was not installed during rennovation, and maintenance has been scheduled to address the issue.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Correct By: 29-Sep-2017

Observed a build-up of litter and debris on the floor in the Crown Tonka walk-in cooler.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Observed mops being dried using an unapproved method.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
Comments
Facility recently underwent renovation, completed in June/July of this year.

Discussed inspection with Angel Coots, PIC.

PIC has employee illness reporting agreement documents signed and maintained at facility. Ensure all employees, including part-time employees, have signed copies at facility at time of next inspection.

Observed boxes resting over cold air vents on bottom shelf of the customer self-service salad coolers. Packaged, whole head lettuce inside boxes measured 45.5*F between packages. PIC stated stock was added within 2 hours of inspection. PIC removed box from around product and relocated product to shelf.
Ensure that boxes do not cover air vents when stocking, as this will assist with maintaining proper cold holding temperature.

Implement designation of shelves for certain products in "Aldi finds" discount section to ensure ready-to-eat foods are not stored below those that require minimum cooking temperatures to destroy pathogens.

Provided copy of norovirus cleanup written procedure and inspection report to management via email.
