Corrected During Inspection Utensils and equipment contacting non-TCS foods not cleaned at required frequency. Observed visible pink and black residue along upper tray on inside top of bulk ice machine. PIC had employee clean at time of inspection.

Critical Corrected During Inspection Improper storage of poisonous or toxic materials. Observed bottles of orange glo and cans of CLR cleaner on shelf above hot sauce. PIC removed to another area at time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed 2 Bev-air coolers to not have ambient air thermometer. PIC placed thermometers in each unit at time of inspection.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Food not protected from contamination. Observed paper towel holder over prep sink and ice bucket causing possible cross-contamination from hand washing.

No sanitizer test kit available. Observed test strips for mechanical warewashing to be expired in 2020. Please obtain new test strips by 5-2-22.

Corrected During Inspection Non-food contact surface(s) not cleaned at the required frequency. Observed a not in use potato oven to have dried spillage. PIC had employee clean at time of inspection.

Critical Corrected During Inspection No air gap or approved backflow prevention device on the plumbing system. Observed no air gap at Pepsi fountain machine. PIC corrected at time of inspection.

Comments
Inspection conducted with Jen Lacey, EHSIT and Paul, Manager/PIC. Facility cooks, cools, and reheats spaghetti with occasional refried beans and chili. Facility utilizes ice bath for rapid cooling and was observed to be cooling correctly at time of inspection. Ensure to monitor all single use food containers under cook line for proper storage. Inspection sent via email.

VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below.
III - P - Preventing Contamination by Hands: Food employees were not contacting exposed ready-to-eat foods with bare hands.
VI - P - TCS Food: Observed food employee cooling cooked time/temperature controlled for safety foods from 135°F to 70°F within two hours and from 70°F to 41°F or below within four hours.
I - P - Employee Health: The operation had an employee health policy on file.
VII - P - Protection from Contamination: Observed employee properly cleaning and sanitizing food contact surfaces.
X - Chemical: Observed toxic materials improperly identified, stored and used.
