Critical Corrected During Inspection Person in charge did not ensure that employees observed foods as they were received. Through discussion, PIC stated that no temperatures of products received are being taken. Ensure temperatures are being taken upon receipt to guarantee safety of products. Education provided at time of inspection.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed scones in the cafe area, and cinnamon rolls in the bakery freezer that were uncovered at time of inspection. PIC had both covered at time of inspection.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed colby jack cheese and smoked cheddar cheese with a date mark of 10/19 in the bakery. Ensure foods with a date mark of 7 days is discarded when passed date. PIC voluntarily discarded at time of inspection.

3717-1-04.1(L) / Ambient air and water temperature measuring devices - accuracy.
Ambient air and water thermometers are not accurate. Observed thermometer in the cafe milk reach in cooler to read 44F when EHSIT read 38F. Obtain accurate thermometer by 11/7/2023.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Ventilation system not maintained. Observed vent over the cooler in the bakery to have visible dust production. Clean by 11/7/2023.
