Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Milk observed in cooler to have been open for more than 24 hours was not date marked.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Corrected During Inspection Working food containers not properly labeled. Several containers in facility did not have common name of item inside on them.

3717-1-04.8(E)(2) / Clean equipment and utensils stored in a self-draining position and covered or inverted.
Corrected During Inspection Clean equipment and utensils not stored in a self-draining position and covered or inverted. Tub of utensils in clean area were stored with handls in contact with food contact surfaces, items should be stored so that bare hand contact with food contact surface is prevented. Tub was not covered to protect from dust or splash.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Corrected During Inspection Equipment and utensils are not being air dried. One container in a stack of containers in clean and dry storage area had water droplets. PIC had washed rinsed and sanitized and air dried.

Conducted and reviewed inspection with owner Darlene Mast.
Discussed when not present a Level One PIC needs to be present.
Discussed the need for a standerd manner of date marking TCS foods.
Fascility is to discontinue the re-use of single use containers.
Lableing of containers needs to be done with non-adsorbent, smooth, durable and easily cleanable lables.
