3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical (CORRECTED DURING INSPECTION) TCS foods not being cold held at the proper temperature. -Observed TCS foods in the long pizza prep cooler to be above maximum allowed safe cold holding temperature of 41*F or below. Facility opens at 10:30 AM, PIC states the prep cooler was filled from the walk-in at 10:15 AM by himself personally. Time of inspection was 1:00 PM. PIC will follow a four (4) hour time limit for all TCS foods in prep cooler until scheduled maintenance can be performed. Any remaining foods shall be discarded after this time limit has been reached.

Equipment and/or components not maintained. -Observed the pizza prep table to not be properly maintaining cold holding temperature.

At time of inspection, prep line cooler was not consistently maintaining proper temperature (inspection time approximately 1:00 PM, prep table filled at 10:15 AM per PIC).
Allied maintenance has already been called and are scheduled to arrive later in the day per PIC; RPH Sanitarian will follow-up no later than the following day to ensure equipment maintenance
has been performed as stated. Until maintenance has been completed, manager will closely monitor a four (4) hour time limit for all TCS foods in this unit.

Call waste management company to request a new dumpster drain plug. At time of inspection, this was missing.

Inspection report sent via email. Employee illness agreements and vomit/diarrhea cleaning procedures provided in hard copy format.
