Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. -Observed a gallon of milk to be at 44*F for an unknown amount of time. PIC states the milk was used for lunch about 2 hours prior. PIC voluntarily discarded 1/4 gallon of milk.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. -Observed the floor drain under the prep sink to contain residue. PIC states they will remove the grate and clean out the floor drain.

Discussed monitoring the cooler to ensure it holds food products at 41*F or less. Observed creamer to be at 39*F, a newly opened gallon of milk to be at 41.5*F and the ambient air temperature of the unit to be at 41*F. PIC placed an additional air thermometer at the warmest part of the unit. PIC states they will monitor the temperature of milk when it is received to ensure it is at the proper temperature.
