Critical Corrected During Inspection Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness. Sanitizer solution in three compartment sink was testing below manufacturer's recommended levels. PIC had solution re-made and it tested in the acceptable range.

3717-1-04.8(A) / Equipment and utensils - air-drying required.
Corrected During Inspection Equipment and utensils are not being air dried. Food storage containers for make table observed to be stacked wet. Employee re-sanitized and air dried them at time of inspection.

3717-1-05.4(O) / Using drain plugs.
No drain plugs in waste receptacle. Have drain plug installed in dumpster by next inspection.

3717-1-06.4(J) / Using dressing rooms and lockers.
Corrected During Inspection Dressing rooms or lockers not being properly used. Personal items not stored in designated areas. PIC moved at time of inspection.

Discussed body fluid clean up kit and employee illness agreement. Manager Anthony will email copy of company agreement and copy of invoice for clean up kit.
