Residential refrigerator / freezer in use. Must replace with an NSF approved or equivalent commercial grade unit that can withstand everyday use, fluctuation in temperatures, and commercial use.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency.
Corrected During Inspection Critical Several areas of mobile unit equipment observed soiled with debris and need cleaned. Items include fryer, fyer hood and backsplash, griddle, inside of reach coolers, inside of prep cooler storage containers, flour bin. Operator began cleaning these items and our agency verified they were corrected during follow-up inspection. Continue cleaning these areas frequently to prevent accumulation of debris.
To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
Areas under front counter and 3 sink have exposed wood and exposed plywood that has accumulated residue. Clean and surface any exposed wood so the surfaces can be easily cleanable.
Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
|Opening inspection conducted. Cold holding units operational and keeping below 41F. Sanitizer, test strips, thermometers and gloves available for use. Asse 1024 backflow on unit at spigot. 20 gallon gray water tank (portable) available for use. Continue cleaning unit frequently to prevent accumulation of debris. Operator is in process of replacing cutting board that is scratched and scored with new cutting board (obtained but still needs installed on prep table). |
Need to put name of operation and city or county on outside of mobile in clear lettering so customers can see where location of unit if from in case of complaints.
