3717-1-06.2(C)
Observed both handwashing sinks in the kitchen to be without paper towels. Ensure that both hand sinks stay properly supplied at all times for proper handwashing procedures.

3717-1-04.4(N)(3)
Corrected During Inspection Critical Quaternary ammonium compound sanitizing solution at incorrect concentration in sani buckets. Solution was tested multiple times and was reading at below 100 ppm. Acceptable ranges are from 100ppm-400ppm. Ensure that the sanitizer is tested prior to use with the proper test strips. PIC dumped the bucket to refill at time of inspection.

3717-1-06.4(A)
Repeat Observed some broken floor tiles in the dry storage area. Ensure that these are replaced so that the floor is smooth and easily cleanable. Also observed a burnt out light bulb in the fume hood above grill. Replace this as well.

Went over the report with PIC at time of inspection.
Observed the current license displayed. PIC has manager certification in food protection. Discussed employee health policy and clean up procedures.
CCP aspects good and PIC knowledgeable. Food is obtained from GFS, date marking was excellent, observed nitrile and vinyl gloves, hair restraints, etc.
COVID precautions good as well. Observed signs, social distancing markers, sanitizer available for use, and all employees were wearing masks.
Discussed with PIC proper use of hand sink and ensuring it stays supplied at all times.
