To ensure proper hygiene, an employee shall eat, drink, or use tobacco only in designated areas where the contamination of exposed food; clean equipment, utensils or linens; unwrapped single service or single use articles; or other items needing protection cannot result. Either remove or place lid on beverage container.  |
| 3717-1-03.2(D) Observed bulk containers of ingredients in refrigerator and in other areas without common name. Working containers holding food or food ingredients that are removed from their original packages shall be identified with the common name of the food. Place common name and all ingredients removed from original packaging. |
| 3717-1-04.8(E) Observed single-use pie containers stored upright with food contact surface exposed. Cleaned equipment and utensils shall be stored inverted to protect from possible contamination from splash or dust. |
