3717-1-03.4(F)(1)(b)/Time/temperature controlled for safety food - cold holding. TCS foods not being cold held at the proper temperature. Observed foods in the walk in cooler not holding at the proper temperatures. Observed foods holding between 48-53 degrees F. Observed the cooler being stocked and the door being opened several times during the inspection. CCP
Corrective Action: PIC stated that the cooler had been recently stocked and the cooler door was opened several times because it was right before lunch. PIC will monitor the temperature of the cooler. PIC called for maintenance. |
