Repeat Observed cutting boards that are discolored/scored that are not easily cleanable. Corrective Action: Cutting boards should be resurfaced or replaced. New cutting boards have been ordered.

Repeat Observed nonfood contact surfaces of containers in the walk-in cooler with a build-up of debris. Corrective Action: Surfaces of equipment and utensils should be cleaned and sanitized.

Observed the ice machine with a build-up of debris inside. (Critical Control Point Violation) Corrective Action: Ice machine should be drained, rinsed and sanitized.
3717-1-03.4(G)/Ready-to-eat, time/temperature controlled for safety food - date marking.
Observed Refrigerated, ready-to-eat, temperature controlled for safety foods not properly date marked in the walk-in cooler. (Critical Control Point) Corrective Action: Prepped foods should be properly date-marked with the date it was prepped or the date of discard to ensure that the item is discarded within 7 days.

Observed multiple cans of Raid in the facility. (Critical Control Point Violation) Corrective Action: Pesticides should only be applied by a licensed pest control operator.

Observed the floors downstairs with a build-up of food debris. Corrective Action: Floors should be kept clean to prevent pest harborage.

Reviewed corrections and repeat violations with the PIC. Repeat violations may result in an administrative hearing.
