3717-1-04.5(A)(1) Critical Equipment food-contact surfaces of slicer had an accumulation of dried debris on it. To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Slicing machine should be broken down. Then washed, rinsed, and sanitized at a minimum once every four hours. |
