Observed raw ground beef stored above Ready to Eat (RTE) food in walk-in cooler. Also observed raw bacon stored next to RTE deli meats in deli cooler without sufficient barrier to prevent cross contamination. To prevent contamination, food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule.  |
| 3717-1-03.2(Q) Observed improper storage of food items. Observed multiple food item stored on floor in walk-in cooler near to standing water on floor. Also observed chips stored on floor in cardboard box outside of walk-in cooler near door of walk-in cooler. PIC immediately placed food on racks. Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. |
