Corrected During Inspection Improper method for cooling TCS foods. Observed cooked rice and chicken cooling without temperature control. Foods shall be rapidly cooled by using an ice bath, ice paddles or by being placed in the walk in cooler in shallow pans. Pic stated that food was just starting the cooling process. Observed food at 139 degrees F. Corrective Action: Pic placed food into the walk in cooler and vented for rapid cooling. Pic will monitor the temperature.
