Corrected During Inspection Observed meat thawing improperly in the sink. Corrective Action: PIC started running cold water over food.

3717-1-04.2(H)(2)
Observed no Irreversible registering temperature indicator strips not readily accessible for hot water mechanical warewashing operations. Corrective Action: PIC said he would order more test strips.

3717-1-04.5(A)(3)
Observed food debris in the bottom of the Wasserstorm stand-up cooler/freezer next to the grill line. Observed grease and debris build-up on the side and underneath of the grill area. Corrective Action: All surfaces should be cleaned regularly to prevent the build-up of debris.

3717-1-05.4(F)(1)
Observed dumpster lid open during inspection. Corrective Action: Outside trash receptacles should have lids that are tight fitted and are closed when not in use.
