Corrected During Inspection Critical Observed salad toppings not being cold held at the proper temperatures. Temperatures range from 45 to 47 degrees F. (Critical Control Point Violation) Corrective Action: PIC discarded the food.

3717-1-04.2(A)
Observed prep cooler unit holding salad toppings that was not holding temperature. Corrective Action: PIC placed ice in the unit to help cool it down and called in a maintenance order. Someone is supposed to be in to work on it tomorrow morning.

3717-1-04.4(A)(2)
Observed the gasket on a cooler broken off. Corrective Action: Gasket should be fixed to ensure the cooler stays at the proper temperature.

Observed nonfood-contact surfaces of equipment with a build-up of debris.

Reviewed cooling procedure with PIC. Reviewed violations at time of inspection. During inspection, PIC called a company about servicing the prep cooler.
