3717-1-03.4(D) Corrected During Inspection Critical Improper cooling of TCS food. Observed ground beef and rice cooling improperly on a shelf. Ground beef 162 degrees F and rice 132 degrees F. Items had recently been cooked. Corrective action- Pic placed ground beef and rice in an ice bath for rapid cooling and will monitor the temperature and place in the walk in cooler.

Complaint received stating customer ate wings, cheese sticks and a burrito yesterday and became sick. Reviewed preparation for each item. Wings and cheese sticks are received and held frozen. Complainant did not specify which type of burrito. Discussed how the different types of burritos are prepared with pic. Reviewed proper cooling methods with pic.
