Observed tempering valve on waste water flow line for mechanical warewasher not operating properly at time of inspection.
Tempering valve must operate properly to cool waste water to 140 Deg. F or below for PVC drain waste and vent system. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.

Observed accumulation of debris on top of warewash machine and under shelves in walk in freezer.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
