| 3717-1-04.4(A)(1) Observed tempering valve on waste water flow line for mechanical warewasher not operating properly at time of inspection. Tempering valve must operate properly to cool waste water to 140 Deg. F or below for PVC drain waste and vent system. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.  |
| 3717-1-04.5(D) Observed accumulation of debris on top of warewash machine and under shelves in walk in freezer. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. |

Single-service and single-use articles shall be stored as specified under paragraph (E)(1) of this rule and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used. |
