3717-1-03.4(F)(1)
Corrected During Inspection Critical TCS foods were not being held at the proper temperature, observed brisket with a cold hold temperature of 47F, cold holding of tcs foods shall be at 41F or less to prevent growth of organisms, date/time mark of brisket indicated less than 4hr hold time in unit, TCS food was placed in proper cold holding unit at time of inspection
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.

Equipment and/or components are not maintained in good working order, observed stand up reach in cooler in food prep area cold holding between 47F-50F, please repair or replace unit to ensure equipment is maintaning cold holding temperature of 41F or less.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.

Equipment components are not intact, tight or properly adjusted, observed seals of stand up reach in cooler and downstairs walkin cooler to have damaged seals, equipment components shall be kept intact .
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Observed accumulation of soil residue on nonfood-contact surfaces, observed handles on stand up reach in cooler in prep area to have accumulation of food debris on surface and handles, such surfaces shall be cleaned at a frequency necessary to preclude accumulation of debris.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.

Work order has been placed for seals of stand up reach in cooler, TCS foods will be placed in walk in cooler in food prep area that is holding at a temperature below 41F until reach in cooler receives maintenance and can maintain a temperature of 41F or less
