3717-1-04.1(A) Observed refrigerator holding at 54 degrees F. Refrigerator is not currently used to store any TCS foods. Pic stated that they are going to replace the equipment. Do not use refrigerator to store TCS foods such as milk until equipment is holding at 41 degrees F or below.

Reviewed proper receiving procedures with pic. Observed stove and convection oven that are not in use. Cooking does not occur at the facility. Hot and cold held foods are received in from the main location. Food must be received in at the proper temperature or discarded. Facility operates on Tuesdays and Thursdays.
