Critical Observed Warewashing machine does not automatically dispense detergent sanitizer. Corrective Action: Warewashing machines should be maintenanced to ensure that it is sanitizing dishes properly at the right concentration of sanitizer or reaching at least 160 degrees F on the dishes surface. Facility is to use the 3 compartment sink to wash, rinse and sanitize dishes under machine is functioning properly.

Observed no sanitizer test kit available for the warewashing machine. corrective Action: Facility should have test strips available to test the warewashing machine.
