|Reviewed proper hot and cold holding, heating, and reheating temperatures. Also reviewed employee health policy, backflow prevention in mop sink, and proper handwashing procedures including when to wash and how to wash. Both PICs demonstrated good knowledge on these subjects at time of inspection. Upon arrival at facility, PICs were in the process of discarding multiple food items that were out of temperature due to a malfunctioning prep table cooler. This demonstrated good knowledge of proper cold holding procedures and the importance of discarding food when it has not been held at proper temperature due to equipment malfuction. Thank you.|
