Critical Food equipment surfaces not cleaned at required frequency. Observed accumlation of debris on food contact surface of ice machine.
Discussed cleaning procedures with pic. Pic stated machine would be cleaned that day.
Corrected During Inspection Critical Chlorine sanitizing solution at incorrect concentration. Observed chlorine level too low at time of inspection.
Pic connected new container of sanitizer to dish machine at time of inspeciton.
Corrected During Inspection Critical TCS foods not being cold held at the proper temperature. Observed steaks in reach in cooler by grill not holding at proper temperature. Steaks holding at 58 degrees F.
Food removed from cooler and placed in walk in cooler. Temperature monitored by pic. Maintenance was being conducted on freezer by grill. Power had been previously shut off to that area. Power was on at time of inspection but temperature to the cooler was still above 41 degrees. Food will remain in walk in cooler until reach in cooler can maintain 41 degrees of below.
Plumbing system not properly maintained or repaired. Observed facets leaking at 3 compartment sink.
