Corrected During Inspection Critical Observed knife stored in the knife box that had a build-up of food debris on it. Corrective Action: PIC put the knife in the sink to be wash, rinsed and sanitized.

Corrected During Inspection Observed employee coat stored above single use items near the back exit door. Corrective Action: PIC moved the coat to the coat rack.
