3717-1-04.1(DD)/Warewashing machines - automatic dispensing of detergents and sanitizers. Observed Warewashing machine does not automatically dispense detergent sanitizer. Corrective Action: Warewashing machines should be maintenanced to ensure that it is sanitizing dishes properly at the right concentration of sanitizer or reaching at least 160 degrees F on the dishes surface. Facility is to use the 3 compartment sink to wash, rinse and sanitize dishes under machine is functioning properly.

Reviewed employee illness policy verification with PIC, High Temperature Dish Machine has been serviced. Machine should be tested using temperature indicator strips daily to ensure the machine is sanitizing dishes.
