3717-1-04.4(L)/Mechanical warewashing equipment - hot water sanitization temperatures Observed hot water for mechanical sanitation machine is below the required temperature. Thermolabels were used to test the machine, they did not indicate the machine was reaching 165 degrees F. Dish machine should run between 165 and 194 degrees Corrective Action: PIC has the company coming tomorrow 11/23 to look at the machine.
