Corrected During Inspection Critical Observed cut tomatoes stored in ice well of a prep table with a temperature of 48°F on the top half layer.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 41°F or less. Person in charge had top half of tomatoes moved to a walk in refrigerator to cool. Tomatoes were cut in the morning and within two hour out of temp. window at time of inspection.
Corrected During Inspection Observed an accumulation of residue on outside baffle of ice bin at time of inspection.
Person in charge cleaned the outside of baffle at time of inspection. While covering and protecting ice stored below baffle.
Corrected During Inspection Observed kitchenware stored in a tub hanging on the rims of mop sink.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be properly stored to prevent contamination of food contact surfaces, equipment and utensils during air drying.
