Corrected During Inspection Critical TCS foods not being cold held at the proper temperature. Observed food items including slaw and cut tomatoes holding at 46 degrees in prep cooler. TCS foods shall be held at 41 degrees or below.
Pic stated that multiple items had recently been prepped. Pic will monitor temperature and move items to walk in cooler if temperature does not rapidly drop.
