Comments

Please put a garbage can by the middle hand sink. There is a fly swatter by the sushi hand sink. Make sure it is not used in the kitchen. Make sure the sugar and starch bowls above the prep table are washed regularly.

20 - 3.51 (a)(ii) - Food - Potentially Hazardous Food - Cold Holding*

Observation (CORRECTED DURING INSPECTION): The internal temperature of the Avantco cooler 41F on the top but significantly above 41F on the bottom.

Correction: Pans of food were blocking the air flow. The pans were moved and the temperature is now less than 41F throughout the unit. No food needed to be discarded. When putting food into this cooler make sure the pans are not blocking the air flow from the top to the bottom.

Observation (REPEAT) (CORRECTED DURING INSPECTION): Rice in Styrofoam containers that had been sitting in the dining room and was moved to the outside walk-in cooler was significantly above 41F.

Correction: Rice was discarded. Store the rice either above 135F or below 41F but not at room temperature.

Observation: The internal temperature of the sushi reach-in is significantly above 41F.

Correction: All potentially hazardous food was discarded. Do not use this unit until the temperature stays below 41F.

14 - 7.1 (a) - Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*

Observation (CORRECTED DURING INSPECTION): The sugar scoop had old sugar and sauce built up on it. A whisk had old food built up inside of it. Pans in the outside dry storage area had old food on them. A wire mesh strainer had old food trapped in the wires.

Correction: All were cleaned during the inspection.

08 - 8.54 - Handwashing - Using a Handwashing Lavatory

Observation (CORRECTED DURING INSPECTION): There was a knife in the front hand sink and a scrubber in the back hand sink.

Correction: Do not use the hand sinks for anything except hand washing and keep them empty at all times.

37 - 3.23 - Food - Miscellaneous Sources of Contamination

Observation: Grocery bags are being used to store prepared food.

Correction: Only use grocery bags for storing food like raw, uncut, produce since these bags are not clean enough for food storage.

Observation: There are several unlabeled food containers throughout the facility.

Correction: Label working containers with the common name of its contents.

41 - 3.55 - Utensils - In-Use - Between-Use Storage

Observation (REPEAT): Bowls with no handles are being used to scoop out rice and starch. The scoops in the ice machine and the sugar were sitting with the handles in the food. Scrapers were being stored between the grill and the stove next to it.

Correction: Use only scoops with handles and store them so that the handle is not is contact with the food. Do not store utensils in areas that cannot be kept clean.

41 - 3.55 - Utensils - In-Use - Between-Use Storage

Observation (CORRECTED DURING INSPECTION): The rice scoop was being stored in a tub of water at room temperature.

Correction: If storing utensils in water the water must be above 135F. If not, make sure they are washed every 4 hours.

Observation: Pans of food in the top of the prep unit are sitting in contact with other food.

Correction: Do not store pans so that they are in contact with other food.

45 - 6.1 - Equipment and Utensils - Multiuse, Characteristics

Observation: The tip of the can opener blade is broken off. This will cause the blade to tear, rather than cut, the lid and pieces of metal will fall into the food.

Correction: Please replace the blade.

47 - 7.3 - Non-Food Contact Surfaces

Observation: The door gasket of the broken refrigerator has old food in it. The right handle of the prep unit has grime built up on it. The wires and some of the nozzles of the fire suppression system in the hood have grease built up on them.

Correction: Please clean the above areas.
